Meal prep recipes in 5 ingredients or less!
Now that you're all settled into uni life, it's time to get a routine sorted to make your life a bit easier.
One of the first things you should master is your food. The easiest and cheapest, way to do this is by prepping your meals in advance. Some meals can even be frozen too meaning they last for weeks!
To help you out, we've put some meal prep recipes together that require 5 ingredients or less.
1. Chicken Burrito Bowls
This is something perfect to make in a big batch and keep in the fridge for a while. Once you've whipped this recipe together, your lunches are sorted for the week and each portion costs next to nothing too.
FOUR ingredients needed: Chicken breast, peppers, rice & kidney beans.

Chipotle vs Homemade Chicken Burrito Bowls. Everyone loves Chipotle right? It’s the perfect post workout meal and is incredibly flavorful. But the portions can be a bit large and the price a touch high. . . On the right is my attempt at a Chicken Burrito Bowl. The recipe is included in my first digital cookbook The Meal Prep Manual available on my website www.mealprepmanual.com (Use code: BURRITO for 50% off 😇) The nice thing about creating the bowls yourself is that you can customize it anyway you like. I have 2-3x the chicken in my homemade bowl for far less than it would cost to add extra at the restaurant. I also prefer more vegetables and less rice which is an easy sub to account for. The biggest advantage of making them at home is the price. I can make my own for just about 1/3 of the price at Chipotle. It really doesn’t take long to prepare them either. I’ve made this recipe enough times that I can be in and out in an hour 😎 . . I find little wrong with eating at Chipotle. It’s quality food that can certainly fit within the confines of your diet if you frame it correctly. You may have to get creative with how you construct your bowls but it is certainly doable. They tend to put a bit more rice and beans in proportion to meat which isn’t ideal but you can always ask for less rice and extra meat for an upcharge. . . Your weekly lunches for work don’t have to be boring or expensive. My main goal when coming up with recipes is to make food that is enjoyable to eat. 2. Vegetable Fried Rice
Ok, this isn't a 'meal' but as a side dish, this could last you months as it's freezable. It's ridiculously cheap to make too, considering 1kg of rice only costs about £2.
FIVE ingredients needed: Rice, carrots, peas, onions and sweetcorn.
3. Enchilada Casserole
Who doesn't love Mexican food? Eating out can cost a fortune but bring your favourite Mexican flavours to your kitchen in casserole form - perfect to pop in your lunchbox. Take the chicken out and this veggie is healthy, filling and just delicious!
FIVE ingredients needed: brown rice, tinned tomatoes, black beans, sweetcorn and cheese!

Enchilada casserole from @sweetsimplevegan and @consciouschris. It’s Taco Tuesday, but this used up more pantry items! 😂 I used up some veggies too which helps since tomorrow is CSA day. I definitely was needing to use corn, green pepper, spring onions, and cilantro from the fridge. I added some black olives and @followyourheart cheese. Tortillas came from the freezer. 4. Greek Meatballs
Cooking up a batch of these on a Sunday night is an easy way to get some meals sorted for the week ahead. We find meatballs quite filling so having them with a Greek-style salad is perfect for us. Veggie or vegan? You can easily swap these for Quorn or even broccoli balls... yes, they're a thing!
FOUR ingredients needed: Meatballs, lettuce, tomato, cucumber.
5. Chicken & Veg Pitta Pockets
Now that the weather is getting colder, it's officially roasted veg season. Stuffing all of this in a pitta bread is a healthy but filling option for lunch or even an evening meal.
FIVE ingredients needed: Chicken, peppers, red onion, courgette, pitta bread.
Nobody said healthy food meant that you need to live off boring salads, you just need lots of Tupperware boxes!
