Quick and Easy Vegetarian Recipes
Keen to introduce more veg into your diet? National Vegetarian Week is the perfect opportunity to give it a go!
And, it couldn't be easier (or quicker.) Here are some recipes to try out that shouldn't get in the way of your busy schedule.
Serve them in a pitta with houmous and grated carrot, keep them on your desk for a quick snack or enjoy with some couscous. They're filling and cheap to make.
Refried bean quesadillas
Cook up a Mexican feast to share with your flatmates. Nachos are always a good addition to any dish too!
Perfect combo with the classic student staple- pasta. A twist on the traditional Italian pesto, Kale is a superfood so you'll be feeling great too!
Asparagus and New Potato Frittata
Super filling and ideal to enjoy during the summer, you can play around with this by adding whatever leftovers you have in the flat.
Eton Mess Stacks
Finish off with something sweet. REALLY easy to make, it's a light and summery pud for any sweet tooth.
